There are all-night buses into the centre... the X95 runs to Syntagma Square, or the X96 to Piraeus.
For example, this hotel in Piraeus is showing as having a room free for US$49 (that was my first pick at searching for youth hostels). Buses from airport to Piraeus at 2050, 2110, 2130, 2150, 2210, 2240, 2310, 2340, etc, buses from Piraeus 0100, 0130, 0200, 0230, 0300, 0330, 0400, 0430, 0500, 0520, 0540.
Depends whether you can be bothered I suppose. I've never done the Piraeus bit, but I'd guess a journey time of 30 mins. Buses leave the arrivals level to the right hand end of the terminal as you exit it. You can buy a ticket either from the booth there or the driver.
Eleftherios Venizelos isn't too bad to sleep in: there's plenty of floor space. There are a few internet terminals around the departure level: they used to be free but I haven't used them for several years. There is (pay-for) wireless if you have a laptop with you. Is the Corfu leg Olympic Airways? They have a fairly major prescence at the airport so checking in should be fairly smooth (as much as it's ever smooth in Greece). Greeks always leave it to the last minute :)
If it all goes horribly pear-shaped, you can get buses to Corfu. Not expensive, just slow :)
